Ingredients: 1 cup chopped pitted peeled mango (not overripe) 1 cup baby spinach (if not available then regular spinach) 1 small onion sliced and separate each ring 1 tablespoon sesame seeds roasted 1-2 tablespoon walnuts roasted ½ tablespoon pine nuts (optional) For dressing: 2 small red chilies fresh (green if not available) 2 cloves garlic 1 teaspoon honey 1 fresh lime juice 2 teaspoons olive oil Rock or sea salt to taste *1 cup = 200 grams Method: In a bowl take some ice and water and soak spinach in it for 3-4 minutes. Drain the water and let the spinach dry completely. Tear the spinach into medium pieces by hand. Make a paste of chilies and garlic. In a small bowl put the chilly-garlic paste add lime juice, honey. olive oil and salt. Mix spinach. mango, onion, sesame seeds, walnuts in a bowl, add the dressing and toss it gently. Serve cold.
