Spinach and Baby Corn Soup

Ingredients

  • White stock (method given below)
  • 15 – 20 leaves spinach torn into 4 pieces
  • 6 piece baby corn (hopped into 3)
  • 1 spring onion with greens finely chopped
  • 1 clove garlic finely chopped
  • 1/2 tsp butter
  • Salt and pepper to taste

Ingredients: White stock

  • 1/2 cup dudhi
  • 1 potato
  • 1 onion
  • A small piece cabbage
  • 3 cups water

Method

  • Pressure cook the above ingredients, grind, sieve if needed.

Method

  • In a pan heat the butter, add spring onions and garlic and sauté a little, add baby corn and stir for 2 minutes, then add spinach leaves and stir for 2 minutes more.
  • Add the white stock and let it boil while stirring it throughout.
  • Add salt and pepper.
